1 cup small tapioca pearls
3 cups coconut milk (full fat)
1 cup ripe mango puree
1/2 cup granulated sugar (or to taste)
1 teaspoon vanilla extract
Pinch of salt
Fresh mango chunks for garnish (optional)
Shredded coconut for garnish (optional)
Instructions
Rinse the tapioca pearls under cold water.
In a saucepan, combine the rinsed tapioca pearls, coconut milk, sugar, and salt.
Let the mixture soak for at least 30 minutes, or preferably 1 hour, to allow the tapioca pearls to soften.
Place the saucepan over medium heat. Stir continuously as the mixture heats up.
Bring the mixture to a gentle simmer, then reduce the heat to low. Continue to cook, stirring frequently, until the tapioca pearls are translucent and the pudding has thickened, about 15-20 minutes.
Remove from heat and stir in the vanilla extract and mango puree until well combined.
Pour the pudding into individual serving dishes or a large bowl.
Cover the surface of the pudding directly with plastic wrap to prevent a skin from forming.
Chill in the refrigerator for at least 2 hours, or until set.
Garnish with fresh mango chunks and shredded coconut before serving, if desired.
Notes
For a sweeter pudding, add more sugar to taste.
If you prefer a thicker pudding, you can let it simmer for a few extra minutes.
Ensure you stir constantly to prevent sticking and ensure even cooking.
