2 large sweet potatoes, diced
1 tablespoon olive oil
1 small red onion, chopped
1 red bell pepper, chopped
1 teaspoon smoked paprika
1/2 teaspoon cumin
Salt and black pepper to taste
2 tablespoons pure maple syrup
1 tablespoon apple cider vinegar
2 tablespoons chopped fresh parsley for garnish
Instructions
Prepare the sweet potatoes by dicing them into half-inch pieces.
Heat the olive oil in a large skillet over medium-high heat.
Add the diced sweet potatoes to the skillet. Cook for about 10-12 minutes, stirring occasionally, until they start to soften and brown.
