Create a comforting meatloaf with a surprising sweet and spicy glaze using maple syrup and Sriracha. This recipe brings familiar flavors together in an exciting new way.

  • 2 lbs ground beef (80/20 recommended)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup ketchup (for the loaf)
  • 1/4 cup maple syrup
  • 2 tablespoons Sriracha
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a loaf pan.
  2. In a large bowl, combine the breadcrumbs and milk. Let it sit for 5 minutes to soften the breadcrumbs.
  3. Add the ground beef, chopped onion, beaten egg, minced garlic, salt, pepper, and 1/4 cup of ketchup to the breadcrumb mixture.
  4. Mix gently with your hands until just combined. Do not overmix.
  5. Shape the mixture into a loaf and place it in the prepared loaf pan.
  6. In a small bowl, whisk together the maple syrup, Sriracha, Worcestershire sauce, and apple cider vinegar to create the glaze.
  7. Spread half of the glaze evenly over the top of the meatloaf.
  8. Bake for 45 minutes.
  9. Remove the meatloaf from the oven and pour the remaining glaze over the top.
  10. Return the meatloaf to the oven and bake for another 15 to 20 minutes, or until the internal temperature reaches 160 degrees F (71 degrees C).
  11. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For a less intense spice level, start with 1 tablespoon of Sriracha and taste the glaze before adding more.
  • You can form the meatloaf on a baking sheet instead of using a loaf pan for a crispier exterior.
  • Use a mix of ground beef, pork, and veal for a richer flavor profile.
