Ingredients

Scale
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon honey or maple syrup
  • 1/4 cup fresh lemon juice
  • 3 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon minced fresh garlic
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon ground cumin
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. For the Asian Sesame Ginger Marinade: Whisk together soy sauce, sesame oil, ginger, garlic, and honey in a bowl.
  2. For the Lemon Herb Garlic Marinade: Combine lemon juice, olive oil, parsley, oregano, garlic, and pepper in a separate bowl. Whisk well.
  3. For the Spicy Chipotle Lime Marinade: Mix lime juice, olive oil, chipotle powder, cumin, and cilantro in a third bowl. Whisk until combined.
  4. Prepare your tuna steaks by trimming any excess fat. Place each steak in a separate resealable plastic bag or shallow dish.
  5. Pour one marinade over each tuna steak, ensuring the fish is fully coated.
  6. Marinate the tuna for 15 to 30 minutes at room temperature. Do not marinate longer than 30 minutes to maintain the best texture.
  7. Remove the tuna from the marinade just before cooking. Discard the leftover marinade.
  8. Sear or grill the tuna steaks according to your preference.

Notes

  • For the best results when searing tuna steak, use high heat and cook for only 1 to 2 minutes per side for rare to medium-rare.
  • If you are using a very thick tuna steak, you can extend the marinating time up to 45 minutes, but watch the texture closely.
  • Always pat the tuna steak dry with paper towels after removing it from the marinade before searing; this helps create a better crust.
