Make a creamy, flavorful Marry Me Chicken dish combined with tender orzo pasta in one simple skillet.

  • 1.5 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried Italian seasoning
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1.5 cups chicken broth
  • 1 cup uncooked orzo pasta
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  3. Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and cook for 30 seconds until fragrant.
  4. Stir in the chopped sun-dried tomatoes and cook for 1 minute.
  5. Pour in the chicken broth and bring the mixture to a simmer. Stir in the uncooked orzo pasta.
  6. Cover the skillet, reduce heat to low, and cook for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  7. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
  8. Return the cooked chicken to the skillet. Stir in the fresh spinach until it wilts, about 1 minute.
  9. Taste and adjust seasoning if needed. Garnish with fresh basil before serving.

Notes

  • If the sauce becomes too thick while simmering, add a splash more chicken broth or water.
  • Use good quality Parmesan cheese for the best flavor in the sauce.
  • You can substitute dried herbs for fresh basil if necessary, but fresh adds better color and taste.
