Marry Me Chicken is a creamy, indulgent skillet chicken dish featuring sun-dried tomatoes and parmesan. It’s a romantic, one-pan meal perfect for a special occasion or a weeknight treat.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Cut chicken breasts in half horizontally to create thinner cutlets. Season both sides with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear chicken cutlets for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  5. Stir in chopped sun-dried tomatoes and red pepper flakes (if using). Cook for 1 minute.
  6. Pour in chicken broth and heavy cream. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  7. Reduce heat to low and stir in grated Parmesan cheese until melted and the sauce is smooth.
  8. Season sauce with salt and pepper to taste.
  9. Return chicken to the skillet and spoon the sauce over it.
  10. Simmer for 2-3 minutes, allowing the chicken to warm through and the sauce to thicken slightly.
  11. Garnish with fresh basil or parsley before serving.

Notes

  • For thinner chicken cutlets, pound the chicken breasts between two sheets of parchment paper.
  • Adjust red pepper flakes to your spice preference.
  • If the sauce is too thick, add a little more chicken broth or cream.
  • Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
