This recipe bakes cod fillets topped with a simple, flavorful mixture of mayonnaise and Parmesan cheese until flaky and golden.

Ingredients

  • 4 (6 ounce) cod fillets
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • Pinch of salt

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
  2. Pat the cod fillets dry with paper towels. Place them in the prepared baking dish.
  3. In a small bowl, mix together the mayonnaise, Parmesan cheese, lemon juice, minced garlic, pepper, and salt until well combined.
  4. Spoon the mayonnaise-Parmesan mixture evenly over the top of each cod fillet, spreading it to cover the surface.
  5. Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork. The topping should be lightly golden brown.
  6. Remove from the oven and serve immediately.

Notes

  • For a crispier topping, you can briefly place the dish under the broiler for the last 1-2 minutes, watching carefully to prevent burning.
  • You can substitute tilapia or haddock for cod if desired.
  • If you prefer a lower-fat option, use light mayonnaise.
