1.5 lbs ground beef
1 cup breadcrumbs
1 large egg
1/2 cup milk
1/4 cup chopped onion
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Worcestershire sauce
2 cups prepared mashed potatoes (instant or leftover)
1 cup shredded cheddar cheese
2 tablespoons butter, melted
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the ground beef, breadcrumbs, egg, milk, onion, salt, pepper, and Worcestershire sauce. Mix gently with your hands until just combined; do not overmix.
Press the meat mixture evenly into the bottom of the prepared baking dish to form the meatloaf base.
Spread the prepared mashed potatoes evenly over the top of the meat mixture. Brush the melted butter over the potatoes.
Bake for 35 minutes.
Remove the casserole from the oven and sprinkle the shredded cheddar cheese over the potato layer.
Return to the oven and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the internal temperature of the meat reaches 160 degrees Fahrenheit.
Let the casserole rest for 5 minutes before cutting and serving.
Notes
For quicker preparation, use pre-made mashed potatoes.
You can substitute half the ground beef with ground pork for added moisture.
This casserole reheats well for meal prep later in the week.
