1 cup cooked quinoa or farro
1 (15-ounce) can chickpeas, rinsed and drained
1 cup chopped cucumber
1 cup halved cherry tomatoes
1/2 cup crumbled feta cheese (optional for vegan)
1/4 cup chopped red onion
1/4 cup Kalamata olives, pitted and halved
2 tablespoons fresh parsley, chopped
For the Dressing:
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon Dijon mustard
Salt and black pepper to taste
Instructions
Cook your grain (quinoa or farro) according to package directions. Let it cool slightly.
In a large bowl, combine the cooled grain, chickpeas, cucumber, cherry tomatoes, feta cheese (if using), red onion, olives, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, oregano, Dijon mustard, salt, and pepper to make the dressing.
Pour the dressing over the salad ingredients.
