2 cups all-purpose flour
1/4 cup granulated sugar
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into cubes
1/2 cup fresh or frozen cranberries
1/4 cup orange zest (from about 2 oranges)
1/2 cup heavy cream, plus more for brushing
1 large egg
1 teaspoon vanilla extract
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Stir in the cranberries and orange zest.
In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Turn the dough out onto a lightly floured surface and gently pat it into a disc about 3/4 inch thick.
Cut the disc into 8 wedges using a knife or bench scraper.
Place the wedges on the prepared baking sheet, spacing them slightly apart.
Brush the tops of the scones with a little extra heavy cream.
Bake for 15-18 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Let the scones cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a sweeter scone, you can add a glaze made from powdered sugar and orange juice.
Fresh orange juice can be used instead of heavy cream for a lighter scone, but the texture will be slightly different.
These scones are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days.
