Instructions

  1. Preheat your oven to the lowest setting, usually between 170°F and 200°F (75°C to 95°C). Line two large baking sheets with parchment paper.
  2. Wipe your mixing bowl and whisk attachment thoroughly with a paper towel dipped in white vinegar or lemon juice to remove any trace of grease. This step is crucial for stable meringue.
  3. Place the room temperature egg whites and cream of tartar into the clean mixing bowl. Beat on medium speed until soft peaks form.
  4. Slowly begin adding the superfine sugar, about one tablespoon at a time, while the mixer runs on medium-high speed. Wait about 30 seconds between additions.
  5. Once all the sugar is added, increase the speed to high. Beat until the meringue is stiff, glossy, and holds firm peaks. When you rub a small amount between your fingers, you should not feel any sugar granules. This usually takes 8 to 10 minutes total whipping time.
  6. Gently fold in the vanilla extract using a rubber spatula until just combined. Do not overmix.

  8. Pipe small mounds onto the prepared baking sheets, leaving about one inch between each cookie.
  9. Bake (dry out) the meringue cookies for 1.5 to 2 hours, depending on your oven and the size of your cookies. They should feel dry and lift easily from the parchment paper.
  10. Turn off the oven, prop the door open slightly with a wooden spoon, and allow the meringue cookies to cool completely inside the oven for at least 1 hour, or even overnight. This prevents cracking and ensures a crisp texture.
