2 cans (16 ounces each) refried beans
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped green chilies (canned)
1/4 cup salsa
1/4 teaspoon chili powder
1/4 teaspoon cumin
Pinch of cayenne pepper (optional)
For serving: Tortilla chips
Instructions
Preheat your oven to 350°F (175°C).
In a medium bowl, combine the refried beans, cheddar cheese, Monterey Jack cheese, green chilies, salsa, chili powder, cumin, and cayenne pepper (if using).
Mix everything together until well combined.
Spoon the mixture into an oven-safe dish.
Bake for 20-25 minutes, or until the dip is heated through and the cheese is melted and bubbly.
Serve hot with tortilla chips.
Notes
You can add a layer of sour cream or guacamole on top before baking for extra creaminess.
For a spicier dip, add a minced jalapeño pepper to the mixture.
This dip can also be made in a slow cooker on the ‘warm’ setting for a few hours.
