Make a crispy, cheesy Mexican Pizza at home that tastes just like the fast-food favorite. This recipe uses simple layers of seasoned beef, beans, and cheese between fried tortillas.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 8 small flour tortillas (6-inch)
  • 1 (16 ounce) can refried beans, warmed
  • 1 cup enchilada sauce (red)
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup sliced black olives
  • 1/2 cup diced tomatoes
  • Vegetable oil, for frying

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain any excess fat.
  2. Stir in the taco seasoning and water. Simmer for 5 minutes until the sauce thickens. Set aside.
  3. Heat about 1/2 inch of vegetable oil in a separate skillet over medium-high heat.
  4. Fry the flour tortillas one at a time for about 30 to 60 seconds per side until they are golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil. Repeat for all 8 tortillas.
  5. Preheat your oven to 375 degrees Fahrenheit.
  6. Place four crispy tortillas on a baking sheet. Spread about 2 tablespoons of warmed refried beans evenly over each tortilla.
  7. Top the beans with one-fourth of the cooked taco meat on each tortilla base.
  8. Spoon about 2 tablespoons of red enchilada sauce over the meat layer on each pizza.
  9. Top with one-fourth of the shredded cheese blend.
  10. Place the remaining four crispy tortillas on top of the cheese layer.
  11. Spoon a thin layer of remaining enchilada sauce over the top tortilla of each pizza.
  12. Sprinkle the remaining cheese, diced tomatoes, and black olives over the top.
  13. Bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
  14. Let cool slightly before slicing and serving.

Notes

  • For extra crispiness, you can bake the tortillas instead of frying them, brushing them lightly with oil first.
  • Use your favorite brand of refried beans or make them from scratch.
  • If you prefer a spicier flavor, add a dash of hot sauce to the meat mixture while cooking.
