Ingredients
Scale
1 pound cooked, peeled, and deveined medium shrimp, chilled
2 cups tomato juice (clamato preferred)
1 cup ketchup
1/2 cup fresh lime juice
1/4 cup finely chopped white onion
1/2 cup finely chopped ripe tomato
1/2 cup diced cucumber
1/4 cup chopped fresh cilantro
1-2 serrano or jalapeƱo peppers, seeded and minced (adjust to your heat preference)
1 teaspoon Worcestershire sauce
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
1 large avocado, diced (for garnish)
Lime wedges (for serving)
Tortilla chips or saltine crackers (for serving)
Instructions
If your shrimp are large, cut them into bite-sized pieces. Place the prepared shrimp in a large glass bowl.
In a separate bowl, whisk together the tomato juice, ketchup, lime juice, chopped onion, chopped tomato, diced cucumber, cilantro, minced chili pepper, Worcestershire sauce, salt, and pepper. Mix until well combined.
Pour the sauce mixture over the shrimp. Gently stir to coat all the shrimp evenly.
Cover the bowl and refrigerate for at least 2 hours, or up to 6 hours, to allow the flavors to meld and the cocktail to chill thoroughly. Do not chill longer than 6 hours as the shrimp texture may change.
When ready to serve, taste the cocktail and adjust salt or lime juice if needed.
Spoon the shrimp cocktail into individual chilled glasses or bowls. Top each serving with diced avocado.
Serve immediately with lime wedges on the side and tortilla chips or saltine crackers.
Notes
Use high-quality, pre-cooked, chilled shrimp for the best texture.
For a spicier sauce, leave some seeds in the chili peppers.
You can substitute Clamato juice with plain tomato juice if you prefer a less savory base.
