3 cups corn kernels (fresh, frozen, or canned, drained)
1 tablespoon olive oil
1/2 cup mayonnaise
1/4 cup sour cream or Mexican crema
1/2 cup crumbled cotija cheese, plus more for topping
1/4 cup chopped fresh cilantro
1 lime, juiced
1/2 teaspoon chili powder (or to taste)
1/4 teaspoon smoked paprika
Salt and black pepper to taste
12 small serving cups (or small bowls)
Instructions
If using frozen or canned corn, pat it very dry with paper towels.
Heat the olive oil in a large skillet over medium-high heat. Add the corn and cook, stirring occasionally, until lightly charred and tender, about 5 to 7 minutes. Remove from heat and let cool slightly.
In a medium bowl, combine the mayonnaise, sour cream (or crema), cotija cheese, cilantro, lime juice, chili powder, and smoked paprika. Mix well until smooth.
Add the slightly cooled cooked corn to the dressing mixture. Stir gently to coat all the kernels evenly.
Season the mixture with salt and pepper to your taste.
Spoon the Mexican street corn mixture evenly into the 12 serving cups.
Top each cup with an extra sprinkle of cotija cheese and a pinch of chili powder or cilantro garnish.
