1 (15 ounce) can corn, drained
1 (10 ounce) can diced tomatoes and green chilies, undrained
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped fresh cilantro
1/4 cup finely chopped red onion
1/4 cup crumbled cotija cheese
1-2 jalapeños, seeded and finely chopped (optional)
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
In a medium bowl, combine corn, diced tomatoes and green chilies, mayonnaise, sour cream, cilantro, red onion, cotija cheese, and jalapeños (if using).
Stir in chili powder and cumin. Season with salt and pepper to taste.
Spread the mixture evenly into a small oven-safe dish.
Bake for 15-20 minutes, or until heated through and bubbly.
Serve warm with tortilla chips or vegetable sticks.
Notes
For a spicier dip, leave some seeds in the jalapeños.
If you can’t find cotija cheese, feta cheese is a good substitute.
