Enjoy this vibrant Mexican Street Corn, also known as Elote. It’s a grilled corn on the cob covered in a creamy, spicy chili-lime sauce and topped with salty cotija cheese. A perfect summer treat!

Ingredients

  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn ears, turning occasionally, until lightly charred and tender, about 8-10 minutes.
  3. While the corn is grilling, whisk together the mayonnaise, sour cream, lime juice, chili powder, cumin, and cayenne pepper (if using) in a small bowl.
  4. Once the corn is grilled, carefully spread the creamy sauce all over each ear of corn.
  5. Sprinkle the cotija cheese and chopped cilantro over the sauced corn.
  6. Serve immediately with lime wedges on the side.

Notes

  • For extra flavor, you can grill the corn directly on the grates or in foil packets.
  • If you don’t have cotija cheese, feta cheese can be a good substitute.
  • Adjust the spice level by adding more or less cayenne pepper.
