  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon chili powder, plus more for dusting
  • Salt to taste
  • 1/4 cup crumbled cotija cheese

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil and grill for 8-10 minutes, turning occasionally, until lightly charred and tender.
  3. While the corn is grilling, whisk together the mayonnaise, sour cream, cilantro, lime juice, minced garlic, and 1/2 teaspoon chili powder in a small bowl. Season with salt to taste.
  4. Once the corn is cooked, carefully spread the mayonnaise mixture evenly over each ear of corn.
  5. Sprinkle the crumbled cotija cheese over the top of the mayonnaise.
  6. Dust with additional chili powder and serve immediately.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the mayonnaise mixture.
  • If you don’t have cotija cheese, crumbled feta or queso fresco can be used as a substitute.
  • You can also roast the corn in the oven at 400°F (200°C) for about 20-25 minutes, turning halfway through.
