  • 4 cups corn kernels (from about 4 ears of corn)
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. If using fresh corn, grill or char the corn kernels until slightly blackened. If using frozen or canned corn, pan-fry them in a skillet with a little oil until lightly browned.
  2. In a large bowl, combine the corn kernels, mayonnaise, cotija cheese, cilantro, lime juice, chili powder, and cumin.
  3. Season with salt and pepper to your liking.
  4. Stir everything together until well combined.
