Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup grated cotija cheese, plus more for garnish
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add corn kernels and cook until tender and lightly browned, about 5-7 minutes.
  3. In a medium bowl, whisk together mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, and smoked paprika.
  4. Add the cooked corn to the bowl and stir to combine.
  5. Season with salt and pepper to taste.
  6. Garnish with extra cotija cheese and cilantro before serving.

Notes

  • For an extra kick, add a pinch of cayenne pepper.
  • If cotija cheese is unavailable, feta cheese can be a good substitute.
