  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 pounds Yukon Gold potatoes, peeled and thinly sliced (about 1/16 inch thick)
  • 2 cups shredded Gruyère cheese
  • 1 cup shredded Parmesan cheese
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 375°F (190°C). Butter a 9×13 inch baking dish.
  2. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, whisking constantly.
  3. Gradually whisk in the milk until smooth. Bring to a simmer, stirring, until the sauce thickens, about 5 minutes.
  4. Remove from heat and stir in salt, pepper, and nutmeg.
  5. Layer one-third of the potato slices in the prepared baking dish. Sprinkle with one-third of the Gruyère and Parmesan cheeses. Pour about one-third of the milk mixture over the potatoes.
  6. Repeat the layering process two more times, ending with the remaining cheese and milk mixture.
  7. Pour the heavy cream evenly over the top.
  8. Cover the dish tightly with aluminum foil.
  9. Bake for 50 minutes.
  10. Remove the foil and bake for another 20-25 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
  11. Let stand for 10 minutes before serving.

Notes

  • For the thinnest slices, use a mandoline slicer.
  • Adjust the seasoning to your preference.
  • You can substitute other cheeses like cheddar or Swiss for Gruyère.
