Instructions
Preheat your oven to 375 degrees F (190 degrees C). Grease a mini muffin pan or line it with paper liners.
In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
In a separate large bowl, whisk the 1/2 cup sugar, egg, apple cider, 1/4 cup melted butter, and vanilla extract until combined.
Add the dry ingredients to the wet ingredients. Mix gently until just combined; do not overmix the batter.
Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
Bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.
While the muffins bake, prepare the topping. In a small bowl, mix the 1/4 cup sugar and 1 tablespoon cinnamon.
Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool slightly more.
Brush the tops of the warm muffins with the 2 tablespoons of melted butter.
Immediately dip or roll the buttered tops into the cinnamon sugar mixture until coated.
Serve warm or at room temperature.
Notes
For a stronger apple flavor, you can reduce the apple cider slightly and add 1/4 cup of finely grated apple.
