  • 2 medium aubergines (eggplants)
  • 4 tablespoons white miso paste
  • 2 tablespoons mirin
  • 1 tablespoon soy sauce
  • 1 tablespoon sake (or water)
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • Toasted sesame seeds, for garnish
  • Thinly sliced scallions, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the aubergines in half lengthwise. Score the flesh in a crisscross pattern without cutting through the skin.
  3. In a small bowl, whisk together the miso paste, mirin, soy sauce, sake (or water), sesame oil, and sugar until smooth. This is your glaze.
  4. Brush a generous amount of the miso glaze over the cut surface of each aubergine half.
  5. Place the aubergines cut-side up on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the aubergine is tender and the glaze is deeply caramelized. Watch closely during the last few minutes to prevent burning.
  7. Remove from the oven. Brush with any remaining glaze if desired.
  8. Garnish immediately with toasted sesame seeds and sliced scallions before serving hot.

  • If you like a deeper flavor, use red miso paste instead of white.
  • For an extra smoky note, you can briefly broil the aubergine for the last minute, watching carefully.
