  • For the Swirl: 1/4 cup brown sugar, 1 teaspoon ground cinnamon
  • For the Glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla extract, 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, 1 teaspoon cinnamon, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  5. Gently fold in the chopped apples and nuts (if using).
  6. In a small bowl, mix the brown sugar and 1 teaspoon cinnamon for the swirl.
  7. Spread half of the batter into the prepared loaf pan. Sprinkle the entire cinnamon-sugar swirl mixture evenly over the batter. Top with the remaining batter.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
