1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
1 cup fresh or frozen blueberries (do not thaw)
1/4 cup fresh lemon juice (for bread)
1 tablespoon lemon zest (for bread)
1 cup powdered sugar (for glaze)
2 tablespoons fresh lemon juice (for glaze)
Instructions
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a standard 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, and salt. Set this mixture aside.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, 1/4 cup lemon juice, and lemon zest.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Gently fold in the blueberries using a spatula.
Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.

Notes
For the moistest bread, gently toss the blueberries with one tablespoon of the dry flour mixture before folding them into the batter. This helps prevent them from sinking.
If using frozen blueberries, do not rinse them or allow them to thaw before adding them to the batter.
If you prefer a less sweet bread, you can omit the lemon glaze.
