1 cup mashed sweet potato (about 1 medium sweet potato)
1/2 cup unsalted butter, melted
1/2 cup packed light brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
Optional: 1/2 cup chocolate chips or 1/2 cup chopped pecans
Instructions
Preheat your oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until combined.
Beat in the eggs one at a time, then stir in the mashed sweet potato and vanilla extract until smooth.
In a separate medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
Gradually add the dry ingredients to the wet ingredients. Mix only until just combined. Do not overmix; a few streaks of flour are fine.
If using, gently fold in the chocolate chips or pecans.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Cook your sweet potato until very soft for the best mashing consistency.
To make these Paleo, substitute almond flour for all-purpose flour and use maple sugar instead of brown and granulated sugar.
For extra moisture, use 1/4 cup of unsweetened applesauce along with the mashed sweet potato.
These muffins freeze well. Cool completely, then store in an airtight container for up to three months.
