24 Oreo cookies
8 ounces cream cheese, softened
1 teaspoon vanilla extract
1/2 cup white candy melts
1/4 cup green candy melts
1/4 cup black candy melts
1/4 cup red candy melts
Edible candy eyes
Instructions
Crush the Oreo cookies into fine crumbs. A food processor works best.
In a bowl, mix the Oreo crumbs with softened cream cheese and vanilla extract until well combined.
Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
Chill the balls in the refrigerator for at least 30 minutes.
Melt the white candy melts according to package directions. Dip each truffle in white candy melts, ensuring it’s fully coated. Return to the baking sheet.
Melt the green, black, and red candy melts separately.
Using a spoon or a piping bag, drizzle the colored candy melts over the white-coated truffles to create eyeball designs.
Immediately press edible candy eyes onto the wet candy melts while they are still soft.
Let the candy melts set completely. You can speed this up by placing the truffles back in the refrigerator for a few minutes.
Store the truffles in an airtight container at room temperature or in the refrigerator.
Notes
For a smoother coating, add a teaspoon of vegetable shortening to the candy melts before melting.
You can use different colored candy melts to create various monster eye effects.
These truffles can be made a day or two in advance.
