1.5 lbs lamb shoulder, cut into 1-inch cubes
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric
1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper (adjust to your taste)
1 (14.5 ounce) can diced tomatoes, undrained
2 cups chicken or vegetable broth
1 cup dried apricots, halved
1 cup couscous
1 cup boiling water
1/2 cup chopped fresh cilantro for garnish
Salt and black pepper to taste
Instructions
Season the lamb cubes generously with salt and pepper.
Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the lamb on all sides in batches; remove and set aside.
Reduce heat to medium. Add the onion to the pot and cook until softened, about 5 minutes.
Add garlic, cumin, coriander, turmeric, and cayenne pepper. Cook for 1 minute until fragrant.
Return the lamb to the pot. Stir in the diced tomatoes and broth. Bring the mixture to a simmer.
Cover the pot, reduce heat to low, and cook for 1 to 1.5 hours, or until the lamb is very tender.
Stir in the dried apricots during the last 15 minutes of cooking.
While the stew finishes, prepare the couscous: Place couscous in a heatproof bowl. Pour 1 cup of boiling water over it. Cover tightly and let stand for 5 minutes. Fluff with a fork.
Taste the lamb stew and adjust seasoning if needed.
Serve the spiced lamb stew over the prepared couscous. Garnish generously with fresh cilantro before serving.
Notes
For extra depth, brown the lamb in small batches to avoid overcrowding the pot.
Chef Tariq suggests adding a pinch of saffron threads to the broth for authentic flavor.
If you prefer a thicker sauce, remove the lid for the last 15 minutes of simmering.
