Learn how to make incredibly fluffy, high protein egg bites in a muffin tin. These freezer friendly breakfast portions are perfect for meal prep and quick grab-and-go mornings.

  • 1/4 cup milk (dairy or unsweetened almond)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked, chopped protein (like ham, turkey sausage, or bacon)
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup finely chopped vegetables (spinach, bell peppers, or mushrooms)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin or line it with silicone liners.
  2. In a large bowl, whisk the eggs, milk, salt, and pepper until the mixture is light and slightly frothy. This helps create a fluffy interior.
  3. Stir in your cooked protein, cheese, and chopped vegetables until they are evenly distributed throughout the egg mixture.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. To prevent rubbery eggs and ensure a tender texture, place the muffin tin inside a larger baking pan. Carefully pour hot water into the larger pan until it reaches about halfway up the sides of the muffin cups (creating a water bath).
  6. Bake for 18 to 22 minutes, or until the egg bites are set in the center and a toothpick inserted comes out clean.
  7. Carefully remove the muffin tin from the water bath. Let the egg bites cool in the tin for 5 minutes before removing them.
  8. For best results, let them cool completely before storing.

Notes

  • For the fluffiest texture, use the water bath method described above. This gentle heat keeps the eggs moist.
  • If you do not have a water bath, reduce the oven temperature to 325°F (160°C) and bake for 20-25 minutes.
  • To freeze: Place cooled egg bites in a freezer-safe bag or container, separating layers with parchment paper. They keep well for up to 3 months.
  • To reheat from frozen: Microwave one or two bites on medium power for 60 to 90 seconds, or until heated through.
