Creamy Garlic Parmesan Mushroom Pasta

A rich and simple mushroom pasta dish made with garlic and Parmesan cheese, ready in under 30 minutes for a quick weeknight meal.

  • 12 oz pasta (fettuccine or penne)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound mixed mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 cup dry white wine or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup pasta water, reserved
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve about 1/2 cup of the starchy cooking water before draining.
  2. While the pasta cooks, heat the olive oil and butter in a large skillet over medium-high heat.
  3. Add the sliced mushrooms to the skillet. Cook them without stirring for 3-4 minutes to allow them to brown, then stir and continue cooking until they release their moisture and turn golden brown, about 5-7 minutes total.
  4. Add the minced garlic and dried thyme to the skillet. Cook for 1 minute until fragrant.
  5. Pour in the white wine or broth, scraping up any browned bits from the bottom of the pan. Let it simmer and reduce by half, about 2 minutes.
  6. Reduce the heat to medium-low. Stir in the heavy cream. Let the sauce gently simmer for 2 minutes until it thickens slightly.
  7. Remove the skillet from the heat. Stir in the grated Parmesan cheese until the sauce is smooth. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.
  8. Add the drained pasta to the skillet. Toss everything together until the pasta is fully coated in the sauce. Season with salt and pepper.
  9. Stir in the fresh parsley. Serve immediately with extra Parmesan cheese on top.

Notes

  • Use a mix of mushrooms like cremini and shiitake for deeper flavor.
  • For a richer sauce, substitute half the heavy cream with cream cheese.
  • You can add a handful of fresh spinach during the last minute of simmering the sauce.
