3 large eggs
1/2 cup fresh spinach, roughly chopped
1/4 cup sliced mushrooms (cremini or white button)
1 teaspoon olive oil or butter
1 tablespoon milk or water (optional, for fluffier eggs)
Salt, to taste

Instructions
Heat the olive oil or butter in a non-stick skillet over medium heat.
Add the sliced mushrooms to the skillet. Cook them until they release their moisture and start to brown, about 3 to 4 minutes.
Add the chopped spinach to the skillet. Cook until the spinach wilts down completely, about 1 minute.
In a small bowl, whisk the eggs well. If using, mix in the milk or water, salt, and pepper.
Pour the egg mixture over the cooked vegetables in the skillet.
Let the eggs set around the edges for about 30 seconds without stirring.
Gently push the cooked egg from the edges toward the center, tilting the pan so the uncooked egg flows underneath.
Continue cooking and gently folding the eggs until they are set to your liking, but still slightly moist.
Remove from heat immediately and serve warm.
