A hearty vegetarian mushroom stroganoff that’s so rich and satisfying, even meat lovers will ask for seconds. This recipe brings classic comfort food to your table with deep, savory mushroom flavors.

  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1.5 pounds (about 6 cups) mixed mushrooms (such as cremini, shiitake, oyster), sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1/4 cup dry white wine (optional)
  • 2 cups vegetable broth
  • 1 tablespoon all-purpose flour
  • 1/2 cup sour cream
  • 1/4 cup fresh parsley, chopped
  • Cooked egg noodles or rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sliced onion and cook until softened and lightly browned, about 8-10 minutes.
  2. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the sliced mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms release their liquid and start to brown, about 10-15 minutes.
  4. Stir in the dried thyme and smoked paprika. Season with salt and black pepper.
  5. If using, pour in the white wine and scrape up any browned bits from the bottom of the pan. Let it bubble and reduce slightly.
  6. In a small bowl, whisk together the vegetable broth and all-purpose flour until smooth. Pour this mixture into the skillet with the mushrooms.
  7. Bring the mixture to a simmer, stirring constantly, until the sauce thickens, about 3-5 minutes.
  8. Remove the skillet from the heat. Stir in the sour cream until well combined and the sauce is creamy. Do not boil after adding sour cream.
  9. Stir in most of the fresh parsley, reserving some for garnish.
  10. Taste and adjust seasoning if needed.
  11. Serve hot over cooked egg noodles or rice, garnished with remaining parsley.

Notes

  • For a deeper mushroom flavor, use a mix of different mushroom varieties.
  • If you don’t have white wine, you can skip it or use a splash of white wine vinegar for acidity.
  • To make it vegan, use a dairy-free sour cream alternative.
