Ingredients
Scale
3 very ripe large bananas, mashed
1/2 cup unsalted butter, melted and slightly cooled
3/4 cup packed light brown sugar
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts or pecans (optional)
Instructions
Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a standard 9×5 inch loaf pan.
In a large bowl, mash the ripe bananas until mostly smooth.
Stir the melted butter and brown sugar into the mashed bananas until combined.
Mix in the egg and vanilla extract.
In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
Fold in the chopped nuts, if using.
Pour the batter into the prepared loaf pan.
Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
Use bananas that are heavily spotted or almost black for the best flavor and moisture.
For an extra rich flavor, substitute 2 tablespoons of the melted butter with 2 tablespoons of browned butter.
If you prefer a sweeter top crust, sprinkle 1 tablespoon of granulated sugar over the batter before baking.
