1 whole chicken, cut into 8 pieces
2 cups all-purpose flour
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon black pepper
2 large eggs
1/4 cup milk
Vegetable oil, for frying
1 cup cayenne pepper
1/2 cup butter, melted
1 tablespoon brown sugar
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper
1/4 teaspoon salt

Instructions
Pat the chicken pieces dry with paper towels.
In a shallow dish, whisk together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
In another shallow dish, whisk the eggs and milk.
Dip each chicken piece first into the egg mixture, then dredge it in the flour mixture, ensuring it’s fully coated.
In a large skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C).
Carefully place the coated chicken pieces into the hot oil, ensuring not to overcrowd the pan. Fry for about 6-8 minutes per side, or until golden brown and cooked through. Remove from oil and drain on a wire rack.
While the chicken is frying, prepare the hot chicken sauce. In a small saucepan, combine the melted butter, cayenne pepper, brown sugar, paprika, garlic powder, onion powder, additional cayenne pepper, and salt. Heat over low heat, stirring until the sugar is dissolved and the sauce is well combined.
Once the chicken is fried and drained, brush each piece generously with the hot chicken sauce.
Serve immediately with pickles.
Notes
For extra crispiness, you can double-coat the chicken by dipping it back into the egg wash and then the flour mixture before frying.
Adjust the amount of cayenne pepper in the sauce to control the heat level.
