Make a creamy, tangy cheesecake without turning on your oven. This recipe sets up easily in the refrigerator for a quick, satisfying dessert.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice, fresh squeezed
  • 1 cup heavy whipping cream, cold

Instructions

  1. Combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of a 9-inch pie plate or springform pan. Chill the crust for 15 minutes.
  2. In a large bowl, beat the softened cream cheese until smooth. Add the powdered sugar, vanilla extract, and lemon juice. Beat until fully combined and creamy.
  3. In a separate, clean bowl, whip the cold heavy whipping cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until just combined. Do not overmix.
  5. Spoon the filling evenly over the chilled crust.
  6. Cover the cheesecake loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until firm.
  7. Serve chilled, topped with your choice of fruit or pie filling.

Notes

  • For an extra firm set, you can dissolve 1 teaspoon of unflavored gelatin in 2 tablespoons of hot water and mix it into the cream cheese filling before folding in the whipped cream.
  • Use full-fat cream cheese for the best texture.
