- 1/2 cup butter
- 1/2 cup cocoa powder
- 2/3 cup milk
- 1 3/4 cups granulated sugar
- 1/2 cup peanut butter
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
- Combine the butter, cocoa powder, milk, and sugar in a medium saucepan.
- Bring the mixture to a full, rolling boil over medium heat, stirring constantly. Do not stop stirring once it boils.
- Boil hard for exactly one minute, then immediately remove the pan from the heat.
- Stir in the peanut butter and vanilla extract until smooth.
- Quickly mix in the quick-cooking oats until they are fully coated.
- Drop rounded tablespoons of the mixture onto wax paper or parchment paper placed on a baking sheet.
- Let the cookies cool and set completely at room temperature for about 30 minutes, or place them in the refrigerator to speed up setting.
Notes
- If you want a firmer cookie, boil the mixture for 1 minute and 15 seconds instead of exactly one minute.
- You can substitute almond butter or sunflower seed butter for peanut butter if you have allergies.
