1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
1 (14 ounce) can sweetened condensed milk
1/2 cup key lime juice
4 large egg yolks
1 teaspoon vanilla extract
1/2 cup heavy cream, whipped (for topping, optional)
Lime slices (for garnish, optional)
Instructions
In a medium bowl, combine graham cracker crumbs and granulated sugar.
Pour in the melted butter and stir until the crumbs are evenly moistened.
Press the crumb mixture firmly into the bottom of an 8×8 inch baking pan lined with parchment paper.
In a separate bowl, whisk together sweetened condensed milk, key lime juice, egg yolks, and vanilla extract until smooth.
Pour the lime filling evenly over the graham cracker crust.
Refrigerate for at least 4 hours, or until the filling is set.
Once set, lift the bars out of the pan using the parchment paper.
Cut into bars.
Top with whipped cream and lime slices if desired.
