Ingredients

  • 2 large cucumbers
  • 8 ounces deli meat (turkey, ham, roast beef)
  • 4 slices cheese (cheddar, provolone, Swiss)
  • 2 tablespoons mayonnaise or mustard
  • Lettuce leaves
  • Tomato slices
  • Onion slices
  • Pickle slices

Instructions

  1. Wash the cucumbers thoroughly.
  2. Cut each cucumber in half lengthwise.
  3. Use a spoon to carefully scoop out the seeds and some of the flesh from the center of each cucumber half, creating a hollow space for the fillings.
  4. Spread mayonnaise or mustard on the inside of the hollowed-out cucumber halves.
  5. Layer your favorite deli meat, cheese, lettuce, tomato, onion, and pickles inside the cucumber boats.
  6. Place the other cucumber half on top to complete the sandwich.
  7. Serve immediately.

Notes

  • You can customize your fillings with any ingredients you like.
  • For a firmer sandwich, pat the inside of the cucumber dry before adding fillings.
