  • 6 cups fresh peaches, sliced
  • 1 cup granulated sugar, divided
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches with 1/4 cup of the granulated sugar, 1/4 cup of flour, cinnamon, nutmeg, and 1/4 teaspoon salt. Toss gently to coat the peaches.
  3. Pour the peach mixture into an 8×8 inch baking dish.
  4. In a separate bowl, whisk together 1 cup of flour, baking powder, and 1/4 teaspoon salt.
  5. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  6. In a small bowl, whisk together the milk, egg, and vanilla extract.
  7. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  8. Spoon dollops of the cobbler topping evenly over the peach mixture in the baking dish.
  9. Sprinkle the remaining 3/4 cup of granulated sugar over the topping.
  10. Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
  11. Let the cobbler cool slightly before serving.

Notes

  • Serve warm with vanilla ice cream or whipped cream for an extra treat.
  • You can use frozen or canned peaches if fresh peaches are not available, but adjust sweetness as needed.
