Cook a complete, hearty meal of black beans, rice, and smoked sausage entirely in one pot for easy preparation and minimal cleanup.

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced into rounds
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup long-grain white rice, uncooked
  • 2 (15 ounce) cans black beans, rinsed and drained
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot.
  2. Add the chopped onion and bell pepper to the pot. Cook until softened, about 5 minutes.
  3. Stir in the minced garlic, cumin, oregano, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  4. Pour in the diced tomatoes (with their liquid) and the chicken broth. Bring the mixture to a boil.
  5. Stir in the uncooked rice. Return the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15 minutes. Do not lift the lid during this time.
  6. Remove the pot from the heat. Stir in the rinsed black beans and the cooked sausage. Cover the pot again and let it stand for 5 minutes to allow the rice to finish absorbing the liquid.
  7. Fluff the rice mixture gently with a fork. Season with salt and pepper to your taste.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • For a smokier flavor, use Andouille sausage.
  • If you prefer a thicker consistency, cook uncovered for the last 5 minutes after the standing time.
  • Rinsing the canned beans removes excess sodium and starch.
