You can make a delicious, easy One-Pot Mediterranean Chicken dinner tonight. This recipe brings the bright, fresh flavors of the Mediterranean right to your table with minimal cleanup.

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup cherry or grape tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Juice of 1/2 lemon

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Season the chicken pieces generously with salt, pepper, and half of the oregano and thyme.
  3. Add the chicken to the hot skillet and cook until browned on all sides, about 4-5 minutes. Remove the chicken and set it aside.
  4. Reduce the heat to medium. Add the chopped onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
  5. Stir in the minced garlic and cook for 1 minute until fragrant.
  6. Add the remaining oregano, thyme, cherry tomatoes, olives, and chicken broth to the skillet. Bring the mixture to a simmer.
  7. Return the browned chicken to the skillet. Stir gently to coat the chicken in the sauce.
  8. Cover the skillet and let it simmer for 10-12 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  9. Remove the skillet from the heat. Stir in the fresh lemon juice.
  10. Taste and adjust seasoning with more salt and pepper if needed.
  11. Garnish generously with fresh chopped parsley before serving directly from the pot.

Notes

  • For extra flavor, you can add 1/4 cup of crumbled feta cheese just before serving.
  • This dish pairs wonderfully with rice, quinoa, or crusty bread to soak up the sauce.
  • If you prefer a thicker sauce, remove the lid for the last 5 minutes of cooking.
