Ingredients
Scale
1 1/4 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/2 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1/2 cup creamy peanut butter
1/2 cup chopped Oreos
1/2 cup butter, softened
1 1/2 cups powdered sugar
1/4 cup creamy peanut butter
2 tablespoons milk
1/2 teaspoon vanilla extract
Chopped Oreos and peanut butter cups for garnish
Instructions
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
In a separate bowl, whisk together the buttermilk, vegetable oil, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Gently fold in the chopped Oreos and 1/2 cup of peanut butter.
Spoon the batter evenly into the prepared cupcake liners, filling each about two-thirds full.
Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
While the cupcakes are cooling, prepare the peanut butter frosting. In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the milk, and beat until smooth and fluffy. Stir in the peanut butter and vanilla extract.
Once the cupcakes are completely cool, frost them generously with the peanut butter frosting.
Garnish with chopped Oreos and peanut butter cups.
Notes
For an extra peanut butter kick, you can swirl a tablespoon of peanut butter into the top of each cupcake batter before baking.
Ensure your butter is at room temperature for the creamiest frosting.
These cupcakes are best enjoyed at room temperature.
