  • 1 tablespoon vegetable oil
  • 1 (16 ounce) package broccoli slaw mix
  • 1/2 cup shredded carrots
  • 1/2 cup chopped green onions
  • 1/4 cup chopped peanuts
  • 1/4 cup sunflower seeds
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Instructions

  1. Toast the ramen noodles: Heat vegetable oil in a large skillet over medium heat. Add the ramen noodles and cook, stirring frequently, until golden brown and toasted, about 5-7 minutes. Remove from skillet and set aside to cool.
  2. Prepare the dressing: In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, grated ginger, and minced garlic.
  3. Assemble the slaw: In a large bowl, combine the broccoli slaw mix, shredded carrots, and chopped green onions.
  4. Add the toasted ramen noodles, chopped peanuts, and sunflower seeds to the bowl.
