1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice
Instructions
Preheat your oven broiler on high. Position an oven rack about 6 inches from the heat source.
Line a baking sheet with aluminum foil for easy cleanup. Place a wire rack on top of the foil-lined sheet.
In a medium bowl, toss the shrimp with olive oil, minced garlic, paprika, salt, and pepper until evenly coated.
Arrange the seasoned shrimp in a single layer on the wire rack. Do not overlap the shrimp.
Place the baking sheet under the broiler. Broil for 2 to 3 minutes per side. Watch closely, as broiling happens quickly.
Shrimp is done when it turns pink and opaque throughout. The internal temperature should reach 145 degrees Fahrenheit.
Remove from the oven and immediately squeeze fresh lemon juice over the hot shrimp.
Serve right away.
Notes
For a spicier version, add 1/4 teaspoon of red pepper flakes to the seasoning mix.
If you do not have a wire rack, you can place the shrimp directly on a foil-lined baking sheet, but turning them carefully is important for even cooking.
Do not overcook the shrimp; they will become tough and rubbery if left under the broiler too long.
