This Overnight French Toast Casserole is a perfect make-ahead breakfast or brunch. Custard-soaked bread topped with a crunchy streusel topping, it’s easy to prepare the night before for a stress-free morning.

  • 1 loaf (1 pound) day-old French bread, cut into 1-inch cubes
  • 8 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • For the Streusel Topping:
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • 1 teaspoon ground cinnamon

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Arrange the bread cubes in an even layer in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, cinnamon, nutmeg, vanilla extract, and salt until well combined.
  4. Pour the egg mixture evenly over the bread cubes, ensuring all pieces are coated. Press down gently to help the bread absorb the custard.
  5. Cover the baking dish tightly with plastic wrap and refrigerate overnight (or for at least 8 hours).
  6. About 30 minutes before baking, prepare the streusel topping. In a medium bowl, combine the flour, brown sugar, and cinnamon.
  7. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  8. Remove the casserole from the refrigerator and uncover. Sprinkle the streusel topping evenly over the French toast.
  9. Preheat your oven to 350°F (175°C).
  10. Bake for 45-55 minutes, or until the casserole is golden brown and a knife inserted into the center comes out clean.
  11. Let the casserole rest for 10 minutes before serving.
