  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup peanut butter cups (chopped or whole mini cups)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and peanut butter until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Fold in half of the chopped peanut butter cups.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving space between them.
  8. Gently press one extra peanut butter cup half or a few pieces into the center of each dough ball.
  9. Bake for 10 to 12 minutes, or until the edges are set and the centers are still soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

  • For an extra chewy cookie, use slightly less flour.
  • If you prefer a stronger peanut butter flavor, use crunchy peanut butter.
  • Press the dough balls slightly before adding the topping peanut butter cup pieces.
