  • 1/2 cup peanut butter powder
  • 1 scoop vanilla or unflavored protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/4 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional mix-ins: chocolate chips, chopped peanuts, banana slices

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, peanut butter powder, protein powder, baking powder, baking soda, and salt.
  3. In a separate medium bowl, whisk together the applesauce, maple syrup, milk, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in any optional mix-ins you are using.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
