1/4 cup peanut butter
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon sesame oil
1 teaspoon grated fresh ginger
1 clove garlic, minced
1/4 teaspoon red pepper flakes (optional)
4 cups shredded lettuce (such as iceberg or romaine)
1/4 cup chopped peanuts
2 green onions, sliced
Instructions
In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, ginger, garlic, and red pepper flakes (if using) until smooth.
Add the ground chicken to the bowl and mix well to coat.
Divide the chicken mixture into 4 equal portions for meal prep.
Store each portion in an airtight container in the refrigerator.
When ready to serve, cook the chicken mixture in a non-stick skillet over medium heat until cooked through, about 5-7 minutes.
Spoon the cooked chicken mixture into the shredded lettuce cups.
Top with chopped peanuts and sliced green onions.
Notes
For a spicier kick, add more red pepper flakes.
You can substitute ground turkey or plant-based crumbles for the chicken.
