1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar, plus 1/4 cup for topping
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
1/2 cup light corn syrup
1/2 cup chopped pecans, plus 1/4 cup for topping
1/4 cup all-purpose flour for topping
Instructions
Preheat your oven to 375 degrees F. Line a 12-cup muffin tin with paper liners or grease well.
In a medium bowl, whisk together the 1 3/4 cups flour, baking soda, and salt. Set aside.
In a large bowl, cream together the softened butter, 1/2 cup granulated sugar, and 1/2 cup brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate small bowl, whisk the buttermilk and corn syrup together.
Alternately add the dry ingredients and the buttermilk mixture to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
Stir in the 1/2 cup chopped pecans.
Prepare the topping: In a small bowl, combine the remaining 1/4 cup brown sugar, 1/4 cup flour, and 1/4 cup chopped pecans. Mix with a fork until crumbly.
Fill each muffin cup about two-thirds full with batter. Sprinkle the brown sugar pecan topping evenly over the batter in each cup.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a richer flavor, use dark corn syrup instead of light corn syrup.
You can make these ahead and store them in an airtight container at room temperature for up to three days.
If you prefer a gooey center, slightly underbake them by about 1-2 minutes.
