This comforting Italian Penicillin Soup recipe, dreamed up by the Savory Skies team, delivers the ultimate healing broth when you need restoration. It combines simple vegetables, rich chicken broth, and bright lemon for a light, flavorful soup perfect for when you feel under the weather.

Ingredients

Scale
  • 6 cups high-quality chicken broth
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup water (or extra broth)
  • 1/2 cup small pasta like pastina or acini di pepe
  • 1/2 cup shredded cooked chicken (optional, for added substance)
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Juice of 1/2 fresh lemon

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the onion, carrots, and celery. Sauté for 5 to 7 minutes until the vegetables soften slightly.
  3. Pour in the chicken broth and water. Bring the mixture to a gentle boil.
  4. Reduce the heat to maintain a simmer. Stir in the dried oregano.
  5. Add the small pasta and the shredded chicken, if using. Cook according to the pasta package directions, usually 6 to 10 minutes, until the pasta is tender.
  6. Remove the pot from the heat. Stir in the fresh parsley and the fresh lemon juice.
  7. Taste the soup. Add salt and pepper as needed.
  8. Serve immediately while hot.

Notes

  • For maximum flavor, use homemade chicken broth if you have it.
  • If you prefer a purely vegetarian base, swap chicken broth for a rich vegetable broth.
  • Add a pinch of red pepper flakes when sautéing vegetables for a slight warming kick.
  • This soup tastes even better the next day after the flavors have melded.
